Vajas kifli (részben teljes kiőrlésű lisztből)/ Buttery croissant

Ismét kiflit sütöttem, ismét vajas-sajtosat. A gyerekek imádják, én meg őket 🙂 Azok a kiflik amiket korábban sütöttem is isteniek voltak, de Zsófitól kaptam egy másik receptet. Muszáj volt azt is kipróbálnom. Itt az eredménye 🙂

Vajas -sajtos kifli (16 db)

Hozzávalók: 500 gr fehérliszt (nálam 150 gr teljes kiőrlésű és 350 gr fehér liszt), 60 gr olvasztott vaj, 2,5 dl tej, 2 tk cukor, 2 tk só, 3 dkg élesztő (nálam 1 cs. instant por élesztő)

A kenéshez: 100 gr puha (de nem olvasztott) vaj+ 1 tk só

Elkészítése:

Az élesztőt és a cukrot elkeverjük a langyos tejben. Kimérjük a lisztet, hozzáadjuk a sót, az olajat, a vizet és az élesztős tejet. Könnyű, lágy tésztát dagasztunk, amit kelesztőtálban 20-30 percig hagyunk pihenni.

Ha dagasztógépünk van akkor szépen minden beleteszünk. A sorrend a fontos: alulra kerüljenek a folyékony alapanyagok, rá a liszt és a tetejére az élesztő.

A megkelt tésztát lisztezett felületre borítjuk. Négy egyforma darabba vágjuk.

Az egyiket kinyújtjuk olyan vékony kör alakra, amilyenre csak tudjuk és megkenjük vajjal.

Pizzavágóval 4 cikkre (ha pici kifliket szeretnénk, akkor 8) vágjuk. Feltekerjük őket úgy, hogy a szélesebb felétől haladunk felfelé a keskenyebb felé. Sütőpapírral bélelt tepsire sorakoztatjuk köztük bőven helyet hagyva a kelésnek.

A többi tésztalappal is megismételjük ugyanezt.

A kifliket alaposan lepermetezzük vízzel, megszórhatjuk szezám-vagy lenmaggal, sajttal, nagyszemű sóval stb.

A sütőt a legkisebb fokozatra melegítjük és betesszük kelni a kifliket kb. 20 percre. Majd felvesszük a hőt 180 fokra és 20-25 perc alatt aranyszínűre sülnek. A sütő aljába egy kislábasra teszünk vizet, hogy a kiflink párában tudjon süni.

Addig a másik tepsinyi kiflit meleg helyen pihentetjük. Annak a sütési ideje már csak 15-18 perc lesz.
